Tabbouleh
Thanks to parsley and its unique flavor, we have tabbouleh. Tabbouleh is a levantine dish that we’ve happily adopted into western culture, and for good reason—it’s absolutely delicious. We suggest you eat it in place of a side salad. It’s healthy, packed with exciting and fresh flavor, and sure to be loved by all.
INGREDIENTS:
-2 cups water
-1 cup quinoa
-¼ cup olive oil
-½ tsp sea salt
-¼ cup lemon juice
-3 tomatoes, diced
-1 cucumber, diced
- 2 bunches green onions, diced
-2 carrots, grated
-1 cup fresh parsley, chopped
HOW-TO:
1. In a saucepan, bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover, and let simmer for about 15 minutes or until cooked. Allow quinoa to cool to room temperature and fluff with a fork.
2. Combine olive oil, sea salt, lemon juice, tomatoes, cucumber, green onions, carrots and parsley in a large bowl. Stir in cooled quinoa. Season to taste!
